A sweet and zesty Colombian.
La Tola is produced on Raul Fajardo's small farm in the municipality of Tambo, Narino in Southwest Colombia. Farmers say coffee from Narino "is the best in Colombia" because the extra hours of sunlight create a higher concentration of sugar in the grain.
This particular lot is a mix of Castillo and Colombia varieties, processed in a traditonal way, carefully hand sorted, de-pulped and fermented in tanks for 18 hours before thorough washing and drying for 10 days. Raul focuses on keeping his quality high in each and every lot he produces.
